Easter Egg Peeps® Pops!
When I think of Easter treats...two come to mind, Reese's Peanut Butter Eggs (one of my all-time favs!) and of course, the infamous Marshmallow Peeps®! How can you not make an Easter basket without one of these two?! I decided to kick it up a notch this year and turn my fabulous Rice Krispie treats into something super fun, super festive and SUPER colorful! Instead of using regular old marshmallows, I subbed them out for PEEPS®!!! Genius I tell ya! Not only did they turn out gorgeous, but they were so so so easy! I'm telling you, EASY. PEASY!

Ingredients:
- 4 Tbsp unsalted butter (divided)
- 4 3-ounce packages Marshmallow Peeps® (in 4 different colors)
- 6 cups Rice Krispie cereal (divided)
- Pinch of salt (per color)
- White candy wafers
- Easter or Spring sprinkles
Misc.:
- Lollipop sticks or popsicle sticks
- Egg shaped cookie cutter
Instructions:
- Prepare an 8-9" loaf pan by lining it with parchment paper and non-stick spray, set aside.
- Divide the Peeps® by multiples of 10 of the same color - 10 pink, 10 yellow, 10 blue, 10 purple. (or use any colors you'd like!)
- In a deep, medium sized microwavable bowl, microwave 10 of the same color Peeps® with 1 tablespoon of butter on high for 45 seconds. (Because microwaves vary, watch closely so the Peeps® don't flow over the sides of the bowl.)
- Stir the butter and Peeps® together until fully melted and incorporated. (Tip: Spray a spatula with non-stick spray before stirring to avoid sticking)
- Stir in 1 1/2 cups of cereal and a pinch of salt until fully combined. Press firmly into the loaf pan.
- Repeat steps 3-4 with the other Peeps® colors.
- Allow to cool completely (1-2 hours) before slicing or cutting into shapes.
- Remove the Peeps® Rice Krispie loaf from the pan and slice into 10 1-inch slices.
- Take the egg cutter and punch out one egg from each slice.
- Insert the lollipop stick gently at the bottom of the egg shape.
- Melt the candy wafers according to the package directions in a microwave safe bowl.
- Drizzle each egg with the white chocolate, then add some fun, festive sprinkles to complete your treat!
